Aspara...wha??

Asparagus, or garden asparagus, folk name sparrow grass, scientific name Asparagus officinalis, is a spring vegetable, a flowering perennial plant species in the genus Asparagus.....Call it what you want, It's Delicious!

The versitile Asparagus is a staple in my kitchen.


So what's the deal with Asparagus?

Asparagus is a nutrient rich veggie with low net carbs, a perfect addiction to a low carb menu.

Asparagus has an impressive nutrition bio! It is loaded with fibre to keep you feeling full and has plenty of vitamins A, C, E, K , folate and chromium. It is a great source of B vitamins, iron, protein, copper, selenium, manganese, potassium and phosphorous.....


Catching a breath......


Along with the above nutrients, asparagus has digestive support nutrients and a long list of phytonutrients that offer many nutritional and health benefits. The incredible nutritional profile of asparagus makes it one of the most healthy food items to include on ANY menu!


So what do I do with it?


When you bring your asparagus home stand it in a cup with a bit of water in the bottom and keep it in the fridge, it will stay fresh longer this way. When you are ready to prepare your nutrition spears, give them a wash in cool water and then remove the fibrous stem by bending the stalk, it will break where it needs to...MAGIC right?!



Get Inspired


Chop some asparagus and eat it raw in a salad or use it to dip into your favorite low carb dip! Raw asparagus is awesome and all of the great nutrients are still present.


Toss a few stalks in some olive oil and parmesan cheese and bake in the oven for 10 minutes. Elevate this by wrapping 3 or 4 pieces in bacon then bake until crispy...a delicous bundle of yum!


Asparagus is best when cooked to al dente, if you overcook it it can become chewy and stringy..not a good time!
